Combine pitted dates, sunflower seed butter and cacao powder in a food processor until completely mixed and a dough is formed. The mixture may be a bit crumbly but should be able to stick together very easily without being too wet. Add a little water if too crumbly, add some more cacao powder (or nut flour of any kind) if too wet.
Add the mixture to a mixing bowl and add cacao nibs, sunflower seeds and hemp seeds (or any other mix-ins!). Combine with hands/utensil until mix-ins are...well, mixed in.
Roll dough into 10-12 balls. Coat in cacao powder, drizzle on sunbutter, add some more cacao nibs/chocolate chips, or leave as is and serve! Store in the refrigerator in an air-tight container. Enjoy!
