I love coffee. I tried to give it up once, but HAHA. Nope, no thanks. Coffee makes me happy, it’s a lovely way to bond with others, and it makes college survivable. Done done and done.
I have, however, struggled with stomach issues of various kinds for various reasons and sometimes regular hot coffee can make for an unhappy and painful stomach. Enter: cold brew. Less acid=easier on the stomach and boy oh boy is it smooth and delicious. I’m normally one for a simple iced cold brew with almond milk, but once in awhile I wanna make coffee time my snack time, and in enters this Chocolate Espresso Shake.
Thick, rich and creamy. It has chocolate. It has cold brew. It has cauliflower. The three c’s?
The frozen cauliflower makes an excellent nutritious base for creamy goodness, and you can’t even taste it. Vegetable game smashed. I steam first and then freeze my cauliflower (like in my Perfect Daily Smoothie) so it’s easier on the digestion and blends to a smoother texture. You can use a frozen banana as well, but if you do I’d leave out the dates to keep the sugar levels lower (if you’re into that). Instead of the dates you could also throw in some vanilla protein powder or use your favorite natural sweetener (pure maple syrup or raw honey).
Side note: I brew my own cold brew at home using a Coffee Sock! Sustainable, affordable and delicious.

Paleo Chocolate Espresso Shake
- 5-6 frozen cauliflower florets
- 2-3 pitted medjool dates
- 1/2 cup cold brew coffee
- 1/2 cup almond milk
- 2 tbsp cacao powder
- 1 tbsp sunbutter (or other nut butter)
- Step 1 Blend all ingredients in a high-speed blender until smooth and creamy. Add more almond milk for a thinner consistency or an extra date/other sweetener for a sweeter taste. Top with cacao nibs, sunbutter drizzle and espresso beans!
