Hi. I love cheese, but I don’t like that cheese makes me break out–even though that doesn’t always stop me from eating the good quality stuff. I love cashew cheese, but I don’t like that cashew cheese upsets my stomach because I have a sensitivity to tree nuts–even though that doesn’t always stop me from eating it. I clearly need some middle ground here.
When it comes to cauliflower, I have no complaints. I think I’ve made that clear with the all the cauliflower recipes on this website and with my general outspoken passion for the most versatile veggie this side of the stratosphere. So when this idea struck me–to make the classic cashew cheese sauce nut-free (while staying dairy-free and paleo) by using cauliflower instead–I was roaring to go.
It all clicked. An EASY, high-veggie, low-impact “cheese” sauce to top my pizzas with, dip my Siete Foods grainless tortilla chips in, and consume with basically everything. It’s creamy as all get out and bursting with flavor. It’s already a staple in my fridge and has made its way into every meal I’ve made in the past few days! It’s by no means a cheese replica, but can certainly work as an excellent substitute for cheese in its liquid form, like on pizzas or pasta dishes. The cheesiness comes primarily from nutritional yeast, which is a deactivated yeast full of B12 that tastes, somehow, cheesy! I’m a big fan, but it has a bit of a unique taste, so omit if you’d like/if you wanna give this a go and you don’t have it on hand. It’ll taste less cheesy, but still savory and creamy and delicious in the way that cheese tastes. Up to you! I like it with and without, usually for different purposes.
I recently doubled this recipe so I can have extra leftover in the fridge for adding to many-a dishes. Cause trust me, if you and I are anything alike, you’ll want it on everything. Cauliflower "Cheese" Sauce
A dairy-free, nut-free, paleo cheese sauce for pizzas, nachos, lasagna, or just plain dipping your veg into.
- 1/2 head cauliflower
- 1/8 cup olive oil
- 1/4 cup nutritional yeast optional; for a more classic cheesy flavor
- 1 tbsp minced garlic
- 1/2 tsp sea salt
Chop up the cauliflower into small florets and steam or boil until cooked through and then strain.
Blend until super smooth and fully combined. Use in place of cheese sauce on top of pasta, on a pizza, in lasagna, with nachos, or even just to dip your veggies into!
