What I Eat In A Day #2 | Paleo

Hello hello there my friends. Here’s what I ate today:

Before breakfast—I like to do morning workouts fasted—I started off with a nice, sweaty workout session of abs & glutes, finishing with a nice vinyasa yoga flow. My knees are injured at the moment due to overuse in a Suzuki class I’m taking in school, so I’m concentrating on exercises I can do on the floor & adapting the yoga I usually do to put as little stress on my knees as possible.

BREAKFAST:

Today I went for an all-time favorite, a deconstructed version of my Chia Seed “PB”& J Parfait–recipe on my blog here! I mixed some protein powder in with the chia seed pudding to up the protein content post-workout. I literally dream of eating this breakfast. So sweet & savory & delicious. Mmmmmmm. I also had about 24 oz of lemon water & a cup of black coffee.

LUNCH:

I wasn’t super hungry come lunchtime, so I’ve got a pretty small salad here, but it’s my all-time favorite: mixed organic greens, bell pepper, red onion, avocado, canned salmon, sunflower seeds, hemp seeds, dressed with olive oil & white wine vinegar. This is pretttyyy much my daily lunch and has been for a long time, and I’m still pretty obsessed with it. SNACKS:

Because my lunch was pretty small, I was hankering for a snack pretty soon after so I had a Coconut Chocolate RXbar. I bought a variety pack of these because the ingredients are SQUEAKY clean (this flavor has only dates, egg whites, almonds, cashews, cacao, coconut, sea salt & natural coconut flavor), and I definitely like them — mostly how clean the ingredients are — but they’re quite taffy-like in texture which just isn’t my favorite texture in the world. I really do enjoy them, but they’re not groundbreaking for me.

I also had about a tablespoon of sunflower seed butter with the rest of the package of pumpkin seeds from the day before. Seriously guys, this stuff is just too good.

DINNER:

Dinner was some pan-seared herb salmon, fried cage-free eggs & a raw salad! I really really enjoyed this salad combo, which included green apples, shredded carrot, bell pepper, red onion & sauerkraut (go gut health!) dressed with a little olive oil & white wine vinegar topped with some salt & pepper.

After dinner I had a square of 95% dark chocolate. This little piece took about 10 minutes to eat because it’s so dark & rich, so that was weirdly satisfying. My boyfriend thinks this tastes like dirt, but HEY! I like it! Then again, ya kinda gotta work your way up to really dark chocolate. It takes a well-versed palate…so be wary & start maybe with 75% if you’ve never ventured into the dark chocolate world.
