Strawberries & (Coconut) Cream Smoothie

I have to admit–I’ve never been a big fan of smoothies. But just recently, I’ve discovered a smoothie I love that ticks all the boxes: creamy, fresh, naturally sweet, and full of good nutrition. Plus it’s dairy, gluten, and sugar-free! I hope you enjoy it as much as I do.


frozen strawberries (a handful)

frozen coconut cream (2 or 3 cubes)*

almond milk (to thickness preference–more for thinner, less for thicker)

zucchini (1/3 of a small one)

apple (1/3 of a whole apple, or to taste for sweetness)

hemp seeds (2 tbsp)

coconut oil (2 tbsp)

*I buy boxed emulsified coconut cream like this kind, and freeze some in an ice-cube tray to use for smoothies & ice-creams; you can use regular, non-frozen coconut cream if you like


Add all ingredients to a blender and blend away! If you’re having trouble with it not blending smoothly, add a little more almond milk.

I topped mine with a sprinkle of hemp seeds, shredded coconut, and sliced strawberries.

The sweetness comes from the strawberries and the apple, and creaminess from the coconut cream. The zucchini not only gets a little veg in there, but also creates a creamy, smooth consistency much like bananas do–and the taste is so mild it doesn’t detract from the sweetness! Another option is to freeze the zucchini ahead of time to replace the frozen quality of the coconut cream or the strawberries if you only have either of those fresh. I love the protein the hemp seeds add, and the coconut oil is another good kick of fat while giving a beautiful silky quality to the smoothie. Also, as per usual with a lot of recipes like these, feel free to use coconut milk or any other milk you fancy in place of the almond milk.
