The presence of smoothie bowls & nice cream (frozen bananas blitzed in a blender to imitate ice-cream) in the health food community has my mouth watering for an equally fresh, colorful version of my own. The trouble is, the main ingredient of bananas to make a creamy consistency can trigger my migraines due to the high carb and sugar content; plus, I gotta say, I’m not a huge fan of the taste.
So while bananas make great treats for some, I wanted a banana-free version full of fat & protein–obviously, I turned to greek yogurt! My tried and true. This was the result:
I blended just about equal parts full-fat greek yogurt with a medley of frozen berries, and ended up with a creamy, cool, delicious treat. Super simple. Feel free to sweeten with whatever sweetener suits your fancy, but the natural sweetness from the berries delivers on its own.
I topped this beauty with some fresh cut strawberries, a flax, hemp & chia seed blend, some shredded coconut, and (my favorite bit) drizzled coconut butter on top. Coconut butter (also coconut manna) is the puréed flesh of a coconut: sweet, rich & hardens like coconut oil when cooled to make a delicious candy-like coating. Unreal. It’s quickly becoming one of my very favorite ingredients to work with.
