Fast Five: Food Obsessions

Here’s a quick rundown of my five nutritious, delicious current food obsessions:

1. Oyster Mushrooms

Ok, let’s chat about these bad boys–I am by no means a mushroom lover. One may even call me anti-mushroom. So the fact that I’m here telling you that I’m obsessed with oyster mushrooms is quite a feat; but in a rush of bravery at the grocery store, I dove in and I’m never coming back up. Pan-fry these delicious fungi in some garlic & butter, throw on a little salt & pepper and you’re all set. They’re meaty, savory, rich–a lot like chicken! And because of that, they’d make a perfect substitute for meat in some of your classic favorite dishes.

2. Red Cabbage

Cabbage is a humble vegetable, but full of gorgeous possibilities–and the red variety are just gorgeous. Chop a head up into thin strips and sauté until soft for a beautiful & hearty replacement for pasta, especially in cheese-based dishes. Either melt soft cheese right in with soy sauce (I use coconut aminos, a gluten-free soy sauce alternative), garlic, salt & pepper or mix in green peppers, spring onions & bean sprouts for a delicious stir fry.

3. Sunflower Seeds

Particularly the spicy variety. Perfect to mix into any vegetable dish, salad, soup, you name it for a huge boost of healthy fat & a kick of flavor. I love these ones from Eden for bringing with me on the go.

4. Minced Garlic

Because purchasing a jar of already minced garlic makes life so much easier.

5. Avocado Oil

Avocado oil is smooth, rich & creamy. The dream. It has a high smoke point (520 degrees fahrenheit) so it’s super versatile, and adds the nutrient-rich fat we love from avocados. It’s my very favorite thing to dress my salads with (combined with red wine vinegar), seeing as it has a mild flavor that enhances the rest of the ingredients. Mmmm.
